Chef de Partie – Cold Kitchen & Sushi

About the role

Leylaty Group is hiring a full-time Chef de Partie for its Cold Kitchen in Jeddah, Saudi Arabia. The chef manages the cold kitchen section of a Japanese, Peruvian and Nikkei fusion restaurant, preparing sushi, sashimi, ceviche, tiradito, Japanese cold appetizers and Nikkei dishes to the restaurant's standards. The post reports to the Executive Chef, Head Chef or Sous Chef.

Key responsibilities

• Prepare sushi (Maki, Nigiri, Uramaki, Temaki), sashimi, sushi rice, fillings, toppings, garnishes and sauces, and Japanese cold appetizers and salads
• Prepare Peruvian ceviche, tiradito, Leche de Tigre and other Peruvian sauces, and Peruvian cold dishes and salads
• Prepare Nikkei fusion dishes combining Japanese techniques with Peruvian flavors, and suggest new cold dishes and seasonal specials
• Organize daily mise en place, supervise Commis Chefs and other staff, delegate tasks and monitor quality
• Control stock levels, follow FIFO, check ingredient freshness and handle raw fish safely, preventing cross-contamination
• Keep the station clean, organized and ready, and complete opening, closing and handover procedures
• Execute orders accurately and quickly during busy service, coordinating with other kitchen sections
