Chef de Partie - Hot Kitchen & Sushi

About the role

Leylaty Group is hiring a full-time Chef de Partie for its Hot Kitchen & Sushi department in Jeddah, Saudi Arabia. The chef manages the assigned kitchen section, preparing and presenting hot dishes of Japanese, Peruvian and Nikkei fusion cuisine to the restaurant's standards, and reports to the Executive Chef, Head Chef or Sous Chef.

Key responsibilities

• Prepare and cook hot dishes, including Japanese items such as tempura and teriyaki, Peruvian dishes and Nikkei fusion dishes, following standardized recipes and plating standards.
• Prepare sushi items and related components, handle seafood and fish safely, and coordinate with the sushi and cold kitchen teams.
• Manage mise en place, guide and support commis chefs, delegate tasks and monitor the quality of work.
• Follow food safety procedures, check ingredient freshness, control temperatures, prevent cross-contamination and follow FIFO stock rotation.
• Monitor ingredient usage, minimize waste, track stock levels and help with receiving and storing deliveries.
• Execute orders accurately and efficiently during busy service, communicate with the pass and other sections, and complete opening, closing and handover procedures.

Required profile

• Previous experience as a Chef de Partie, Demi Chef de Partie or in a similar hot kitchen position.
• Strong culinary and technical skills, leadership abilities and effective station management.
• Commitment to high standards of food quality, consistency, presentation, hygiene and food safety.
