Chef de Partie – Sushi

About the role

The Chef de Partie – Sushi will manage the sushi section of KUURU’s kitchen in Riyadh, ensuring every dish meets the brand’s high standards for taste, presentation and safety. You will lead the daily operations of the station, maintain quality, and support junior team members.

Key responsibilities

• Prepare and cook sushi dishes following KUURU’s recipes, portion specifications and presentation guidelines.
• Organise the workstation, complete daily mise en place and ensure the section is ready for service.
• Monitor ingredient freshness, handle storage correctly and minimise waste.
• Coordinate with the Sous Chef and other sections to guarantee smooth service flow.
• Maintain strict food‑safety, HACCP and hygiene procedures throughout the shift.
• Assist in opening and closing duties, stock checks and equipment maintenance.

Required profile

• Previous experience as a Chef de Partie or in a comparable culinary role.
• Background in high‑end, fine‑dining or premium restaurant environments is preferred.
• Strong knowledge of Japanese, Nikkei or broader Asian cuisine.
• Understanding of food safety, hygiene standards and HACCP regulations.
• Ability to work efficiently under pressure and support junior staff.
• Professional attitude, discipline and a passion for continuous culinary development.
