Outlet Manager – French Italian Specialty Restaurant

About the role

The Outlet Manager will lead the French‑Italian specialty restaurant at Rosewood Red Sea, delivering an ultra‑luxury dining experience that blends coastal Italian and Provençale influences. This role requires a polished hospitality professional with strong fine‑dining and seafood service background, capable of maintaining the restaurant’s high standards and guest expectations.

Key responsibilities

• Oversee daily operations in line with Rosewood, Forbes and LQA standards.
• Maintain refined service sequence, table presence, pacing, ambiance and product presentation across all service periods.
• Coordinate with Culinary and Beverage teams on menu storytelling, beverage service and table‑side moments.
• Manage reservations, seating flow, VIP guests, celebrations and high‑profile dining arrangements.
• Conduct detailed pre‑service briefings covering guest profiles, dietary needs and service priorities.
• Monitor associate performance to ensure confident, personalized service delivery.
• Support revenue performance through premium product knowledge, wine confidence and thoughtful upselling.
• Ensure immaculate standards of setup, tableware, menus, lighting, music and overall presentation.

Required profile

• 3–5 years of food and beverage experience, including restaurant management in luxury fine‑dining or ultra‑luxury hotels.
• Strong background in Mediterranean, Italian, French Riviera or high‑end European dining concepts.
• Excellent knowledge of premium beverage presentation and refined service sequence.
• Proven ability to manage VIP guests, high‑profile tables and sensitive service recovery moments.
• Exceptional attention to detail, personal presentation and floor presence.
• Leadership experience with coaching refined service teams.
• Commercial awareness of revenue, average check, labor control and cost discipline.
• Pre‑opening experience in a luxury or ultra‑luxury destination resort is highly preferred.
