Restaurant Manager – Fast‑Casual Pizzeria

About the role

We are looking for a Restaurant Manager to run Catro, a Neapolitan‑style takeaway‑first pizzeria in Riyadh. You will own daily operations, drive kitchen throughput, and ensure delivery performance while the owner is away.

Key responsibilities

• Open/close the restaurant, schedule shifts, and deploy labor according to forecasted demand.
• Hire, onboard, train and hold accountable pizzaiolos, prep and counter staff; conduct weekly one‑ons and monthly performance reviews.
• Manage Jahez, HungerStation and Keeta storefronts – maintain menu accuracy, order acceptance times, ratings and dispute handling.
• Perform weekly stock counts, order ingredients to par levels, log waste and follow up with suppliers; keep the Rewaa POS accurate to the gram.
• Enforce dough, bake and boxing standards; ensure compliance with Baladi municipality and SFDA food‑safety regulations.
• Reconcile cash daily, investigate variances and maintain clean POS discipline.
• Prepare weekly P&L snapshots covering sales, labor, COGS and key performance indicators, adding actionable insights.

Required profile

• Minimum 3 years managing a QSR, pizzeria or fast‑casual operation in Saudi Arabia.
• Hands‑on experience with delivery aggregators (Jahez, HungerStation, Keeta) and their impact on rankings.
• Strong inventory, cost‑math and P&L analysis skills; able to explain variances.
• Willingness to work on the line during peak periods, not just from an office.
• Fluent in Arabic and English at a working level.
