Restaurant Manager – Mediterranean Cuisine

About the role

Lead the Mediterranean restaurant at Fairmont The Red Sea, delivering an immersive, luxury dining experience that reflects the rich heritage of Mediterranean cuisine. You will be responsible for operational excellence, guest satisfaction, and team development in a world‑class resort setting.

Key responsibilities

• Oversee daily restaurant operations, ensuring service aligns with Fairmont’s standards of excellence.
• Maintain strict inventory control, sourcing authentic ingredients while optimizing cost and minimizing waste.
• Ensure full compliance with HACCP, local regulations, and Fairmont operational policies.
• Drive revenue through strategic upselling, promotions, and average check optimization.
• Lead, coach, and develop a team of Heartists®, fostering a culture of passion, professionalism, and emotional intelligence.
• Collaborate with marketing and events teams to promote the restaurant and create memorable guest experiences.

Required profile

• Bachelor’s degree or diploma in Hospitality Management, Food & Beverage, or a related field.
• 3–5 years of experience in a luxury hotel or high‑end restaurant, preferably with Mediterranean cuisine exposure.
• Pre‑opening experience is highly advantageous.
• Strong understanding of luxury service standards, guest engagement, and Fairmont/Raffles service culture.
