Sushi Chef - Cold Kitchen (Japanese & Peruvian)

About the role

Leylaty Group is hiring a Sushi Chef for its cold kitchen in Jeddah, Saudi Arabia. The chef prepares and presents Japanese and Peruvian cold dishes, mainly sushi, sashimi, ceviche, tiradito and Nikkei fusion cuisine, reporting to the Executive Chef / Head Chef.

Key responsibilities

• Japanese: prepare maki, nigiri, uramaki and temaki; cut sashimi with proper knife techniques; make sushi rice, fillings, toppings, garnishes and sauces; prepare cold appetizers and other cold dishes with consistent portions and presentation.
• Peruvian: prepare ceviche and tiradito, Leche de Tigre and other sauces; work with lime, ají peppers, coriander and red onion; keep the right balance of acidity, spice and freshness.
• Nikkei fusion: combine Japanese techniques with Peruvian flavors, create innovative presentations and suggest new dishes when asked.
• Food safety: inspect fish and seafood, prevent cross-contamination, control temperatures, follow FIFO and parasite-control/freezing rules for raw fish, and keep workstations clean and sanitized.
• Kitchen operations: set up the cold kitchen station, execute orders accurately, follow standardized recipes and portion controls, monitor stock and minimize waste.

Required profile

• Previous experience as a Sushi Chef or in a similar cold kitchen position.
• Good knowledge of Japanese cuisine and sushi preparation; experience with sashimi, ceviche and tiradito highly preferred.
• Knowledge of Nikkei fusion is an advantage.
• Ability to work under pressure while keeping food quality consistent, with strong attention to detail and teamwork.

Required skills

• Good knife skills and seafood handling and preparation.
• Understanding of food safety, hygiene and temperature-control procedures.
• Willingness to follow the Executive Chef's instructions and standard operating procedures.
