Sushi Head Chef

About the role

As a Sushi Head Chef at Zuma, you will lead the sushi operation, creating memorable dining experiences and upholding the high standards that define the brand across its Middle East locations.

Key responsibilities

• Lead and oversee the sushi operation, ensuring top‑quality food, consistency, presentation and taste.
• Maintain sushi mise en place, fish preparation and kitchen flow for uninterrupted service.
• Mentor, train and develop the sushi team to exceed Zuma standards.
• Manage fish handling, storage and freshness, complying with food safety regulations.
• Collaborate with senior management to act on guest feedback and continuously improve the sushi offering.
• Control section costs, stock levels, product quality and waste to keep the operation commercially effective.
• Work with the senior culinary team to innovate seasonal and traditional Japanese dishes.

Required profile

• Passion for Japanese cuisine and extensive experience as a Sushi Head Chef or senior sushi leader in a luxury, high‑volume setting.
• Strong leadership ability to inspire, develop and manage a diverse sushi team.
• Commercial awareness with experience managing food costs, stock and kitchen performance.
• Calm, organised and able to thrive in a fast‑paced environment.

Required skills

• Expertise in sushi preparation techniques: fish cutting, sushi rice, sashimi, nigiri, maki.
• Knowledge of traditional Japanese culinary methods and seasonal ingredient integration.
