Commis – Food Preparation

About the role

The Commis will support the culinary team at the Nujuma Ritz‑Carlton Reserve by preparing high‑quality meals and ensuring consistent presentation. This full‑time, onsite position is ideal for a motivated individual with solid food‑preparation experience who thrives in a fast‑paced hospitality environment.

Key responsibilities

• Prepare special meals and substitute items according to recipes and quality standards.
• Regulate temperatures of ovens, broilers, grills, and roasters.
• Thaw frozen items safely in refrigeration units.
• Ensure proper portioning, arrangement, and garnish of dishes.
• Maintain food logs and monitor food quality and quantity.
• Communicate with chefs and service staff about specials, excess items, and out‑of‑stock menu items.
• Assist with hiring, training, scheduling, and performance coaching as needed.
• Follow all safety, security, and company policies, reporting any hazards or incidents.

Required profile

• Minimum three years of relevant culinary experience.
• Technical, trade or vocational school education in culinary arts or related field.
• No prior supervisory experience required.
• Ability to stand, walk, bend, lift up to 25 lb and work in a hot kitchen environment.
• Professional appearance and commitment to confidentiality.
