Director of Food & Beverage

About the role

The Director of Food & Beverage will lead all culinary and beverage operations for Rosewood AMAALA, delivering ultra‑luxury dining experiences that reflect the brand’s standards and Red Sea Global’s regenerative tourism vision.

Key responsibilities

• Oversee restaurants, bars, banquets and in‑room dining, ensuring high‑quality, innovative, culturally relevant experiences.
• Lead, mentor and develop culinary, service and beverage teams, fostering creativity and exceptional guest service.
• Design menus using local, sustainable ingredients and global trends, aligning with environmental goals.
• Manage the F&B budget, optimizing costs while maintaining profitability and operational efficiency.
• Collaborate with suppliers and local producers to support zero‑waste initiatives.
• Ensure compliance with food safety, hygiene, local regulations and Rosewood brand policies.
• Implement training programs for culinary arts, beverage knowledge and luxury service.
• Analyze guest feedback and drive continuous improvement of dining experiences.
• Partner with Marketing and Events to create unique dining events and promotions.

Required profile

• Bachelor’s degree in Hospitality Management, Culinary Arts, Business Administration or related field.
• 7‑10 years progressive F&B management experience, with at least 4 years in a senior leadership role at a luxury hotel or resort.
• Proven ability to lead diverse teams and collaborate with internal and external stakeholders.
• Deep knowledge of culinary trends, beverage programs and luxury dining.
• Experience implementing sustainable food and beverage practices.
