Mediterranean Restaurant Manager

About the role

We are seeking a dynamic Restaurant Manager to lead our Mediterranean restaurant at Raffles The Red Sea. The role combines operational excellence with a passion for Mediterranean cuisine, delivering an unforgettable dining experience for discerning guests.

Key responsibilities

• Oversee daily restaurant operations, ensuring service aligns with Raffles standards and Mediterranean heritage.
• Conduct briefings, inspections and maintain food quality, presentation, cleanliness and service flow.
• Manage inventory, sourcing authentic ingredients, control costs and minimise waste.
• Ensure compliance with HACCP, local regulations and Raffles policies.
• Curate personalized guest experiences, handle feedback and build lasting relationships.
• Lead, coach and develop a team of Heartists®, fostering professionalism, grooming and emotional intelligence.
• Drive revenue through strategic upselling, promotions and average check optimisation.

Required profile

• Proven experience managing a fine‑dining or upscale restaurant, preferably with Mediterranean focus.
• Strong leadership skills with a track record of training and developing hospitality teams.
• Commitment to high standards of service, hygiene and guest satisfaction.
