Sushi Sous Chef

About the role

We are looking for a skilled Sushi Sous Chef to support the Chef de Cuisine in delivering exceptional Japanese cuisine at our luxury hotel. You will help manage the sushi kitchen as an independent profit centre, ensuring the highest standards of guest satisfaction.

Key responsibilities

• Assist the Chef de Cuisine in planning, organising, directing and controlling daily kitchen operations.
• Maintain product quality, portion control and presentation for all sushi dishes.
• Monitor inventory, cost control and profitability of the sushi station.
• Ensure compliance with hygiene, safety and sanitation standards.
• Train and supervise junior kitchen staff and coordinate with other outlets.

Required profile

• Minimum 2 years experience as a Sous Chef or 4 years as a Chef de Partie in a hotel or large restaurant.
• Experience in luxury international hotel brands is preferred.
• Formal qualification in Kitchen Production or Management is an advantage.
• Strong knowledge of kitchen hygiene and occupational health & safety standards.
