Restaurant Manager – All-Day Dining, Pool Bar & Beach

About the role

Rosewood Red Sea is seeking a dynamic Restaurant Manager to oversee its all‑day dining brasserie, pool bar and beach operation. The role blends luxury service standards with a family‑friendly atmosphere, requiring strong operational leadership across multiple service periods.

Key responsibilities

• Lead daily operations for the brasserie, pool bar and beach areas, adhering to Rosewood, Forbes and LQA standards.
• Ensure consistent service delivery across breakfast, lunch, afternoon, poolside, beach and high‑demand family periods.
• Monitor service flow, table turnover, seating management and guest engagement.
• Coordinate with Culinary, Beverage, Recreation and other departments for seamless resort service.
• Manage guest preferences, dietary requirements, VIP arrangements and special requests.
• Conduct pre‑service briefings and operational checks for each service period.
• Handle guest feedback with ownership and timely follow‑up.
• Support revenue through upselling, premium beverage promotion and resort offering awareness.
• Maintain equipment, cleanliness, mise en place, signage and service presentation.
• Train and coach associates on service discipline, pool/beach etiquette and guest recognition.

Required profile

• 3–5 years of Food & Beverage experience, including management in luxury hotels or resorts.
• Proven expertise in all‑day dining, breakfast, pool or beach service, or high‑volume resort restaurants.
• Ability to manage fast‑paced operations while upholding luxury standards.
• Understanding of family resort dynamics and outdoor service flow.
• Knowledge of labor scheduling, productivity, covers, average check and cost control.
• Strong communication and coordination skills across multiple departments.
• Hands‑on leadership style with experience training large service teams.
• Pre‑opening or destination resort experience is highly preferred.
