Assistant Director of Food and Beverage

About the role

The Assistant Director of Food and Beverage supports the Director in overseeing a diverse portfolio of restaurants, bars, lounges, pool and beach venues, in‑room and villa dining, as well as events and private dining across the resort. The role requires a refined luxury‑service leader with strong floor presence, operational discipline and financial acumen to ensure consistent, personalized guest experiences.

Key responsibilities

• Assist the Director in daily leadership and coordination of all Food & Beverage operations.
• Maintain visible leadership across outlets, especially during peak periods, VIP movements and key guest moments.
• Drive execution of Rosewood brand standards, Forbes standards and LQA requirements.
• Support operational readiness, service flow, guest engagement and product consistency.
• Collaborate with Culinary and Beverage teams to uphold quality, timing, presentation and concept integrity.
• Monitor guest feedback and lead immediate service recovery.
• Support budgeting, forecasting, productivity, cost control and revenue‑enhancement initiatives.
• Coach and develop outlet managers, supervisors and associates to build a confident, polished service culture.
• Participate in recruitment, onboarding, training, performance follow‑up and succession planning.
• Act on behalf of the Director when required, ensuring continuity of leadership and operational control.

Required profile

• 5–7 years of progressive Food & Beverage experience, including senior leadership in luxury or ultra‑luxury hotels or resorts.
• Strong exposure to multi‑outlet resort operations (restaurants, bars, lounges, pool/beach, in‑room dining, events).
• Pre‑opening experience in a luxury environment is highly preferred.
• Proven ability to lead multicultural teams with presence, maturity and consistency.
• Solid understanding of Forbes, LQA or equivalent luxury service standards.
• Financial competence in budgeting, forecasting, payroll productivity, cost control and performance review.
• Excellent guest engagement and communication skills.
• Highly organized, detail‑driven and comfortable operating in a complex destination resort.
