Assistant Outlet Manager – Luxury Resort

About the role

The Assistant Outlet Manager will support the F&B Manager in delivering exceptional food and beverage experiences at Raffles & Fairmont Red Sea, a nature‑focused luxury resort within the Red Sea Project.

Key responsibilities

• Assist in preparing the annual operating budget, forecasting outlet revenues and expenses.
• Develop and manage staff schedules in line with staffing guides to ensure adequate coverage.
• Maintain cleanliness and proper upkeep of all outlet areas.
• Plan promotions, manage beverage purchases, set pricing, and monitor beverage cost of sale.
• Ensure compliance with health codes, hotel standards, and sanitation requirements.
• Supervise daily bar operations, monitor staff attitudes, and provide continuous training.
• Handle equipment responsibly to minimise breakages and losses.
• Conduct pre‑opening and closing inspections using standard checklists.
• Prepare requisitions for beverages, condiments, supplies, and guest items while respecting par stock levels.
• Participate in creating new drinks and snacks, improving presentation and menu variety.
• Enforce grooming standards, check expiry dates in fridges and bar stores, and control waste.
• Report equipment issues to Maintenance and perform any other duties assigned by the F&B Manager.
