Chef de Cuisine – Moroccan Cuisine

About the role

Mövenpick Hotel & Residences Riyadh is looking for an experienced Chef de Cuisine to lead its authentic Moroccan culinary concept. The role combines mastery of traditional Moroccan techniques with 5‑star kitchen leadership and operational discipline.

Key responsibilities

• Design, develop and execute authentic Moroccan menus, including Tagines, Couscous, Pastilla, Mezza, pastries and banquet offerings.
• Direct daily kitchen operations, manage staffing schedules, oversee ingredient receiving and inventory, and ensure compliance with SFDA, HACCP and Accor food‑safety standards.
• Control food costs, monitor waste, assist the Executive Chef with budgeting, menu pricing and equipment planning.
• Recruit, train and mentor kitchen staff, conduct workshops on Moroccan cooking techniques and support Saudisation initiatives.

Required profile

• Diploma or degree in Culinary Arts or equivalent.
• 5–7 years of high‑end Moroccan cuisine experience, with at least 2–3 years in a senior kitchen leadership role.
• Certified in HACCP or Food Safety Management (Level 3 or 4 preferred).
• Fluent in English; Arabic and/or French advantageous.

Required skills

• Deep mastery of authentic Moroccan culinary techniques (slow cooking, spice blending, pastry preparation).
• Proficiency with inventory control and menu costing software (Materials Control, FMC or similar ERP systems).
• Strong knowledge of kitchen P&L management and cost control.
• Compliance with international food safety standards and GCC regulations.
