Commis Chef - Café Boulud

About the role

Four Seasons Hotel Riyadh is hiring a Commis Chef for its Café Boulud restaurant, which serves refined French-inspired cuisine. The Commis Chef supports the kitchen team in preparing and producing dishes to Café Boulud recipes and Four Seasons standards, working closely with the Chef de Cuisine, Sous Chefs, Chef de Partie and other culinary staff. The position is localized and open to Saudi nationals only.

Key responsibilities

• Prepare food according to Café Boulud recipes, standards and specifications, and complete daily mise en place
• Assist the Chef de Partie and Sous Chef with ingredients, sauces, garnishes and vegetables
• Follow recipes, portion sizes, presentation standards and food safety and hygiene procedures
• Label, date, store and rotate food products correctly, and check par levels and stock availability
• Maintain proper food temperatures and comply with HACCP procedures
• Operate kitchen equipment safely and keep workstations, utensils and equipment clean
• Minimize food waste and support the kitchen during busy service periods
• Report shortages, quality issues or equipment concerns to the Chef de Partie or Sous Chef
• Attend training and develop culinary skills, and follow the hotel's work rules and standards of conduct

Required profile

• Culinary education, diploma or relevant culinary training preferred
• Previous experience in a professional kitchen, hotel or restaurant preferred
• Basic knowledge of food preparation, cooking techniques, food safety, hygiene and HACCP
• Ability to follow recipes and work in a fast-paced kitchen
• Good communication and teamwork skills
• Basic proficiency in English preferred
• Saudi nationality is required for this localized position
