Executive Chef for Luxury Hotel in Diriyah

About the role

The Executive Chef will lead all culinary operations for Raffles Diriyah, shaping the hotel’s gastronomic identity across restaurants, banquets, residences and in‑room dining. As a member of the Executive Committee, the role works closely with the General Manager on pre‑opening strategy, brand positioning and team building.

Key responsibilities

• Define and implement culinary concepts, menus and SOPs that reflect Raffles’ legacy and Saudi heritage.
• Oversee food ordering, preparation, production and quality control across all outlets.
• Manage food cost, labour cost and overall departmental P&L performance.
• Lead the pre‑opening budget, staffing plan and equipment procurement.
• Recruit, interview and onboard senior culinary leadership.
• Ensure compliance with Saudi food safety, health, licensing and fire‑safety regulations.
• Foster a high‑performance kitchen culture and mentor culinary talent.
• Engage with guests, media and high‑profile events to elevate the dining experience.

Required profile

• Minimum 10 + years progressive culinary leadership experience.
• At least 3 years as Executive Chef in an internationally branded luxury hotel.
• Proven ability to build and lead large culinary teams.
• Strong commercial acumen with experience managing budgets and P&L.
• Deep understanding of Saudi heritage cuisine and international fine‑dining standards.
