Indonesian Chef de Partie (Bakery)

About the role

A hotel belonging to the Accor network, which includes more than 45 brands, 5,500 hotels and 10,000 restaurants, is looking for an experienced and skilled Indonesian Chef de Partie (Bakery) to join its Culinary Team at Novotel Thakher Makkah. The successful candidate prepares and produces high-quality bakery products while keeping excellent standards of taste, presentation, food safety and hygiene.

Key responsibilities

• Prepare and produce breads, rolls, pastries and other bakery products according to approved recipes and standards.
• Ensure consistency in taste, texture, quality, portioning and presentation.
• Organize ingredients and equipment, monitor their quality and freshness, and ensure proper storage and rotation.
• Follow recipes, production schedules and portion control procedures, and minimize food waste.
• Maintain a clean, organized and hygienic workstation and follow HACCP, food safety, health and hygiene standards.
• Operate and maintain bakery equipment safely, and coordinate with other kitchen sections for timely production and service.
• Support the Chef de Cuisine, Sous Chef or Pastry Chef, assist with buffet setups, banquets, events and special functions, train junior team members, and take part in daily briefings.

Required profile

• Previous experience as a Chef de Partie, Bakery Chef or similar in a hotel, restaurant, bakery or large-scale food operation.
• Culinary or bakery certification/diploma preferred; hotel experience, especially in Makkah, is an advantage.
• Ability to work shifts, weekends, public holidays and during peak seasons.

Required skills

• Bread, rolls, pastries, doughs and bakery products, including fermentation, proofing and baking temperatures.
• Food safety, HACCP, hygiene and sanitation standards.
• Strong attention to detail, ability to work under pressure and in a fast-paced kitchen, and good teamwork and communication.
