Indonesian Chef - Hot Kitchen

About the role

A hotel belonging to the Accor network, which operates more than 45 brands, 5,500 hotels and 10,000 restaurants and lifestyle destinations, is looking for an Indonesian chef for its hot kitchen in Makkah. The role covers preparing authentic Indonesian dishes to approved recipes and hotel standards, supporting buffet and banquet service and working through peak periods such as Hajj and Ramadan.

Key responsibilities

• Prepare and cook a variety of authentic Indonesian hot dishes according to approved recipes and hotel standards.
• Ensure consistency in food quality, taste, portion sizes and presentation.
• Maintain food handling, storage, temperature control and sanitation in line with food safety requirements.
• Monitor ingredient usage, minimise food waste and support food cost control.
• Keep the hot kitchen clean, organised and well maintained.
• Coordinate with the Sous Chef and other kitchen staff for timely preparation and smooth operations.
• Support buffet preparation, banquet operations and high-volume production during peak periods, including Hajj and Ramadan.
• Follow hotel policies, operational procedures and food safety regulations in Saudi Arabia.

Required profile

• Previous experience as an Indonesian Chef in a hotel or restaurant.
• At least 3-5 years of relevant culinary experience, preferably in hotel hot kitchens.
• Strong knowledge of traditional Indonesian cuisine, ingredients, cooking techniques and preparation methods.
• Ability to work efficiently under pressure while keeping high quality standards.
• Willingness to work flexible shifts, weekends, public holidays and peak periods.

Required skills

• Knowledge of food safety standards, HACCP principles and kitchen hygiene.
• Teamwork, time management and organisation.
