Sous Chef – Sourdough Bakery

About the role

We are seeking an experienced Sous Chef specialized in sourdough baking to lead our bakery’s sourdough section in Riyadh. The candidate will be responsible for maintaining the starter culture, overseeing fermentation schedules, and ensuring consistent product quality.

Key responsibilities

• Lead daily production of sourdough breads, managing the sourdough bakery section.
• Maintain and refresh the sourdough starter to guarantee optimal activity.
• Plan and control fermentation processes, including cold fermentation and proofing.
• Monitor dough quality and adjust formulas based on temperature, humidity, flour characteristics, and fermentation status.
• Ensure consistent texture, flavor, and appearance of all baked products.

Required profile

• Minimum five years of hands‑on experience in sourdough baking and natural fermentation.
• Strong scientific understanding of hydration percentages, flour types, and temperature control.
• Detail‑oriented with a commitment to high‑quality standards.
• Proven ability to manage production efficiently within a professional bakery team.
