Chef de Partie (Bakery)

About the role

A hotel belonging to the Accor network, which includes more than 45 brands, 5,500 hotels and 10,000 restaurants, is looking for an experienced and skilled Chef de Partie (Bakery) to join its Culinary Team at Novotel Thakher Makkah. The successful candidate prepares and produces high-quality bakery products while keeping excellent standards of taste, presentation, food safety and hygiene.

Key responsibilities

• Prepare and produce breads, rolls, pastries and other bakery products according to approved recipes and standards.
• Ensure consistency in taste, texture, quality, portioning and presentation.
• Prepare and organise ingredients and equipment, and monitor their quality, freshness and storage rotation.
• Follow recipes, production schedules and portion control, and present products to hotel standards.
• Maintain a clean, organised and hygienic workstation and follow HACCP, food safety, health and hygiene standards.
• Operate and maintain bakery equipment safely, minimise food waste and coordinate with other kitchen sections.
• Support the Chef de Cuisine, Sous Chef or Pastry Chef, assist with buffet setups, banquets, events and special functions, train junior staff and take part in daily briefings.

Required profile

• Previous experience as a Chef de Partie, Bakery Chef or similar in a hotel, restaurant, bakery or large food operation.
• Culinary or bakery certification/diploma preferred; hotel experience, especially in Makkah, is an advantage.
• Ability to work shifts, weekends, public holidays and during peak seasons.

Required skills

• Bread, rolls, pastries, doughs and bakery production techniques.
• Fermentation, proofing, baking temperatures and HACCP.
• Attention to detail, teamwork and ability to work under pressure in a fast-paced kitchen.
