Sous Chef - French, Italian & Mediterranean Cuisine

About the role

Leylaty Group is hiring a Sous Chef in Jeddah, Saudi Arabia, to assist the Head Chef in managing kitchen operations, supervising staff and delivering high-quality dishes. The role centres on French, Italian and Mediterranean cuisine, with a focus on authenticity, consistency and presentation, while keeping the kitchen efficient, safe and clean.

Key responsibilities

• Assist the Head Chef in planning, developing and executing menus focused on French or Italian Mediterranean cuisine.
• Supervise kitchen staff and ensure proper food preparation, cooking techniques and presentation standards.
• Monitor food quality, taste and consistency against brand and culinary standards.
• Ensure compliance with health, safety and food hygiene regulations.
• Manage inventory, order supplies and control food costs.
• Train and mentor kitchen staff on techniques, recipes and plating standards.
• Help schedule staff shifts and manage daily kitchen operations.
• Maintain cleanliness and sanitation across all kitchen areas.
• Handle customer feedback, special dietary requests and complaints when needed.
• Support the Head Chef in building a positive, disciplined and efficient kitchen.

Required profile

• Proven experience as a Sous Chef or in a similar senior kitchen role.
• Strong hands-on experience in French or Italian Mediterranean cuisine is mandatory.
• Culinary degree or equivalent professional certification preferred.
• Ability to work under pressure in a fast-paced, high-volume kitchen.
