Chef de Partie – Sushi & Peruvian Cuisine (Luxury Property)

About the role

Apt Resources is seeking a talented Chef de Partie with expertise in both sushi and Peruvian cuisine to join a luxury property team serving guests on the Red Sea, Saudi Arabia. You will work closely with the Executive Chef to create authentic and innovative dishes that showcase the rich flavors of Peru alongside high‑quality sushi.

Key responsibilities

• Prepare and cook traditional and contemporary Peruvian dishes and sushi according to established recipes and quality standards.
• Collaborate with the Executive Chef on menu planning, recipe development, and new concept creation.
• Supervise and mentor junior kitchen staff, ensuring consistent culinary excellence.
• Maintain the highest standards of food quality, taste, presentation, and safety.
• Keep the kitchen workspace clean, organized, and compliant with food safety regulations.
• Manage inventory, assist with ordering, and minimize waste while ensuring ingredient freshness.
• Stay updated on sushi and Peruvian culinary trends to continuously innovate the menu.

Required profile

• Proven experience as a Chef de Partie, preferably with a focus on sushi and Peruvian cuisine.
• Culinary qualification or equivalent professional experience.
• Strong knowledge of Peruvian ingredients, cooking methods, and flavor profiles.
• Experience in an ultra‑luxury hotel, resort, or fine‑dining environment.
• Ability to work efficiently in a fast‑paced kitchen while maintaining attention to detail.
• Excellent leadership, communication, and teamwork skills.
• Flexibility to work various shifts, including weekends and holidays.
