Sushi Rolling Chef

About the role

The Sushi Rolling Chef prepares all rolled sushi items (maki, uramaki, temaki, futomaki and specialty rolls) according to restaurant standards. The role calls for strong technical skills, speed, attention to detail and strict adherence to hygiene and safety rules. It is a full-time position in Riyadh.

Key responsibilities

• Prepare all types of rolls, keeping them tight, evenly thick and correctly cut, using the right nori, rice, fillings, garnishes and sauces.
• Prepare daily mise en place: vegetables, sauces, toppings and tempura items, ensuring consistent size, shape, weight and presentation.
• Inspect raw fish and ingredients before use, season and handle rice properly, and follow storage and temperature procedures.
• Follow HACCP and food safety guidelines, keep workstations, knives, mats and tools clean, change gloves and wash hands, and observe FIFO and labelling.
• Produce rolls quickly during peak service, stay efficient and communicate with the sushi head chef and the team.
• Support the head chef with prep and mise en place, report stock or quality issues and cooperate with kitchen colleagues.

Required profile

• 2 to 4 years of sushi rolling experience.
• Ability to maintain speed and consistency under pressure.
• Preferred: experience in high-volume sushi restaurants, basic sashimi cutting skills and creativity with specialty rolls.

Required skills

• Strong knife and rolling skills.
• Knowledge of sushi rice handling.
• Understanding of food safety.
